Brunch Tasting: Audace at Wanderlust Hotel, 2 Dickson Rd Singapore 209494

Where might one go on a Sunday afternoon for brunch in Singapore, without having the necessary cliche eggs, toast and sausages? Well, think audaciously... think Audace at Wanderlust Hotel, in Little India! This French bistro dining seeks to be more 'fun' dining than 'fine dining' even though Chef Jérémy Gillon is a one-starred Michelin chef who led L’Epicurien in the French Alps before. Previously Cocotte, Audace at the lobby of Wanderlust hotel is now an evolved space that's still airy, bright and comfortable.


I love the greens at the bar. What struck us during the tasting was also Chef's use of Alpine herbs which he sources from a friend. We learn that there are 24 wild Alpine herbs used such as Sapin (Pine), Verveine (Family of mint), Matricaire (Family of Camomile), Serpolier (Wild Thyme) amongst others.

And here's the Brunch Menu, which is subjected to changes of course, due to availability of ingredients. For a total of 6 appetisers, 5 mains and 6 desserts you only pay S$68++ (for an additional $30 you get free flow of Rosé wine). What a fantastic deal - that's S$4 per dish if you divide it up.


The 6 appetisers we tried in late 2017 (yes this post is long overdue!) were:

Arugula Salad, Parmesan, Lemon And Olive Oil Dressing
Shark Rillette ---> My favourite! Who would have thought!
Asparagus Salad Chorizo Iberico  
Focaccia With Cooked Ham & Mascarpone Black Pepper
Salmon Gravlax Beetroot
Duck Terrine & Pickles





For the mains with sides, they are:

Grilled White Tuna, Origan - very clean tasting
Red Snapper with Kafir & Orange Paste Dressing - so fresh
Braised Pork Belly - like French siobak!
Smoked Breast Duck - fav!
Skewer Flank Beef - so juicy...
With Creamy Polenta/ Broccoli Mash/ Baked Heirloom Beetroot/ 
Garlic Sprout & Mash/ Baked Rutabaga & Aubergine. (Part of their vegetables first philosophy, which is so cool!)




The creamy polenta was irresistible as well. 




We ended with the 5 desserts, which thankfully was quite manageable after all that feasting. To be honest I felt this was the weakest of the 3 courses as they are generally not that French, I would have preferred more classics like a Mini Creme Brulee.

They were super pretty though! This was very refreshing and citrusy.




Audace is definitely one of the rising stars of 2017 and with brunch you could sample the highlights of Chef Jeremy's creations at a leisurely and affordable pace. It is a lovely spread which I hope to go back for again soon!
